  EDITORIAL REVIEW

Chanterelle, owned by husband and wife team Karen and David Waltuck, opened in 1979 to immediate acclaim. Originally housed in a small, elegant cast iron storefront in the Soho district of Manhattan, Chanterelle quickly became one of New York's most highly regarded dining spots. David Waltuck's innovative cuisine based on French classics, in combination with superb service given by Karen Waltuck, earned Chanterelle four stars by the New York Times in 1987.

In 1988, Chanterelle moved to its current location in the grand 19th-century Mercantile Exchange Building in Tribeca. The dining room ,with its carved cherry wood pilasters, custard colored walls, ornate tin ceiling and soaring floral arrangements, uniquely combine a quiet elegance with an unpretentious downtown spirit. Well-spaced, over-sized tables are attended to by an impeccably trained staff, knowledgeable in all aspects of food, wine and service. Chanterelle's wine cellar boasts some 3000 bottles and offers unusual, small producers as well as the best of French wines from Bordeaux and Burgundy. Chanterelle also has a wide variety of aged and rare Cognacs, Armagnacs, ports and dessert wines.

David Waltuck searches for the freshest seafood, produce, game and wild mushrooms from small sources all over the country. Combining the best of ingredients with his love for classic French cuisine, as well as for flavors of the Far East, David Waltuck continues to create the refined, innovative cuisine for which Chanterelle has long been known. Meanwhile, Sommelier Roger Dagorn is well-known for his excellent abilities to seek out the finest selection of wines for even the least intrepid and intimidated diner. Thus, we continue to give Chanterelle our highest ratings for all-around excellence.
